Taking a hard-boiled egg to school is an egg-celent choice for brain health! The egg yolk is rich in choline, which is an important part of brain cells and memory development. Plus the yolk is a great source of vitamins A, D, E & B12, riboflavin, selenium, and folate. While the egg white provides a good source of high-quality protein.
