BC Parent Profile: Elaine Tan Comeau Exciting Entrepreneur Extraordinaire

We’re excited to get to know another BC Parent. Elaine Tan Comeau is from Coquitlam, BC. She is a Mom, Speaker, CEO @easydaysies, Dragons’ Den Winner, Author, and Foodie. She’s an all-around busy woman that has a lot to be proud of. Read below to learn a little more about her.

Describe your family:  I am so very blessed to have a loving husband who makes us laugh every day, and three incredible children who make me so very proud, and one cute little dog.

Current job/career:  Creator and CEO of Easy Daysies, the award-winning Daily Visual Schedules for Kids, Podcast Host of Elaine’s Kitchen Table…the business of real-life”, Keynote Speaker on all things parenting, educational, and entrepreneurial, author.

How did you choose the names for your children? I was a schoolteacher when we had our children. It was tricky as there were hundreds of names I could not use since my students would think I was choosing favourites, lol.  Our children’s names are special to us because we love their names, our girls have biblical names and our son has his grandfather’s and great-grandfather’s names.

What is the best advice you ever received as a parent? Don’t mould them into who you want them to be, help them unfold into the unique person they were meant to be.

What is your favourite go-to dinner recipe when you are short on time? Elaine’s Salsa chicken:  This recipe is super easy but you will need 50 minutes, less than 5 minutes to prep, by 45 minutes in the oven.  Preheat oven to 450. Grab a frozen chicken breast per person. Line a baking sheet with foil, and spray it with veggie oil. Place chicken breast on the sheet and rub both sides with oil, then season both sides with taco seasoning and salt and pepper.  Place a tablespoon of mango salsa on each piece. Place on the middle rack in the oven.  After 40 minutes add a slice or cheddar cheese on top of each chicken breast (on top of salsa). Bake for another 5 minutes. Take out and enjoy with a side salad.  So easy and so yummy.  Sometimes, I slice sweet potatoes and add in from the start with the chicken.   During the pandemic, each of my kids have taken turns making this dinner a couple of times a month. So easy!

What is something about you we would find surprising? Oh, let’s see… I taught Sunday-school at churches for about 26 years of my life, and I was an elementary school teacher for thirteen years.  And one that people are always surprised at is that I had a stroke three years ago, as a mom of three young kiddos. I am honoured to be a spokesperson for Heart & Stroke sharing to women about stroke awareness and survival. I am grateful and count my blessings each day!

What is your Favourite self-care activity? I love downtime with my kids. Movie nights with popcorn and chips (we are a chips-loving family).  But when I am alone with a good book, that is fantastic too!
