By eating the rainbow you are also eating a ton of antioxidants, which help to protect the brain from stress caused by eating some not so good food and the environment. Freeze those fresh, local summer berries so you and your kids can enjoy them long after the season is over. Spread berries on a baking sheet and place in the freezer for a few hours, then transfer to a freezer-safe storage container.
